Ragi Dosa Recipe Instant & Healthy | Finger Millet Dosa & Coconut Chutney

Crispy Ragi Dosa Recipe Ingredients:
1 cup ragi flour
3 cups water
1 small onion, finely chopped
1/4 cup carrot, grated
1 teaspoon ginger, grated
1 tablespoon curry leaves, finely chopped
1-2 green chillies, finely chopped
2 tablespoons coriander, finely chopped
1 teaspoon cumin seeds
1/2 teaspoon salt
Oil, for roasting
Method:
In a mixing bowl, combine ragi flour, chopped onion, grated carrot, green chillies, curry leaves, coriander, grated ginger, cumin seeds, and salt.
Add 3 cups of water and whisk well to form a smooth batter without lumps.
Let the batter rest for 15 minutes, then mix again and adjust the consistency if needed.
Heat a pan and lightly grease it with oil, then wipe it with kitchen paper.
Sprinkle a little water on the pan to check the heat. Once the pan is very hot, pour the batter onto the pan.
Drizzle 1 teaspoon of oil around the edges and cook for about 2 minutes or until the dosa turns crispy.
Serve hot with chutney.
Notes: If the dosa breaks, add 1-2 tablespoons of all-purpose flour to the batter. Adjust the batter consistency by adding water as needed.
A thicker batter results in soft dosas, while a thinner batter makes them crispy.
Coconut Chutney Recipe Ingredients:
1/2 cup roasted gram
4-5 dried red chillies
1/4 cup coriander stalks
1-2 garlic cloves (optional)
A small piece of tamarind
1/2 cup freshly grated coconut
1 teaspoon salt
Water, as needed
Tempering:
1 tablespoon oil
1/2 teaspoon mustard seeds
1/2 teaspoon asafoetida (hing)
1 dried red chilli, broken
1 sprig of curry leaves
Method:
In a blender, add grated coconut, roasted gram, dried red chillies, coriander stalks, tamarind, garlic (if using), and salt.
Add water and blend to a smooth chutney.
Adjust the consistency as required.
Heat oil in a small pan.
Add mustard seeds and let them crackle.
Add asafoetida, broken red chilli, and curry leaves, then sauté for a few seconds.
Remove from heat and pour the tempering into the chutney.
Mix well and serve.
